Fearless Restaurants will debut Martini & Roz, a contemporary Italian restaurant, in Wayne, Pennsylvania, with an anticipated opening in late summer or early fall 2026.

The former Bertucci’s at 523 W. Lancaster Avenue is being reimagined by Philadelphia’s second-generation family restaurant group as Martini & Roz, an Italian retro-futurist destination where American style meets Italian passion. The space will feature a live tasting counter and a menu that celebrates the intersection of heritage and innovation.

Martini & Roz is inspired by a narrative of cultural connection, embodied by its fictional namesakes: Martini Callahan, an American restaurateur, and Rozalia “Roz” Rossi, a native of Positano. Their story is a celebration of the union between American and Italian culinary traditions, brought to life through a menu that highlights bold proteins, pristine seafood, and pasta as a refined complement—all designed to be enjoyed in a vibrant, communal atmosphere.

Named in honor of Martin and Roslyn Grims; the parents of General Partner Marty Grims and grandparents of Sydney Grims, Partner and Director of Business Development—Martini & Roz stands as a tribute to family, community, and the enduring spirit of hospitality that defines Fearless Restaurants.

A Strategic Pivot During Development

Fearless Restaurants—renowned for White Dog Cafe, Autograph Brasserie, Triple Crown, Rosalie, and Moshulu—pivoted from the previously announced Testa Rossa concept. This evolution was informed by the resounding success of Triple Crown and valuable guest feedback, which underscored a desire for dining experiences that are both energetic and memorable.

Set to open at 523 W. Lancaster Avenue in Wayne, a location with deep roots in the community’s dining landscape. Martini & Roz will present a contemporary Italian menu inspired by the vibrant flavors of Southern Italy. The culinary approach will focus on beloved classics, thoughtfully prepared to showcase their purest and most expressive forms.

The Food: Big, Bold, and Unapologetically Italian

The menu at Martini & Roz is both approachable and ambitious, featuring an array of seafood, fish, steaks, and chops, as well as crudo, chilled raw seafood, oysters, and wood-fired pizzas. Guests can expect house-made charcuterie, salumi, and cheese selections that highlight imported mozzarella and burrata. House-made pasta will be served as a shared mid-course within the Contorni section, inviting guests to experience the conviviality of Italian dining.

Rooted in classic technique and bold flavor, the cuisine at Martini & Roz emphasizes the highest-quality ingredients, eschewing heavy sauces in favor of preparations that let each dish’s essence shine, that are flavorful, recognizable, and true to its origins.

The Space: Italian Retro-Futurism

Rohe Creative, the acclaimed Philadelphia design firm behind several Fearless Restaurants projects, is orchestrating the interior vision for Martini & Roz. Drawing inspiration from Italian retro-futurism, the design will evoke confident energy and avant-garde luxury, with sculptural forms, bold red accents, and a commitment to excellence. The space will feature sleek, sophisticated elements such as curved banquettes, sculptural lighting, and dramatic arches, creating an atmosphere that is both striking and inviting.

Martini & Roz will accommodate 180 guests in the main dining room, with additional seating for 20 at the bar, 20 at the tasting counter, 20 in a private dining room, and 70 outdoors. Two open kitchens will showcase wood-burning ovens and a glass-enclosed cheese cave, offering guests a front-row view of hand-sliced meats. The restaurant will serve lunch, brunch, and dinner in a vibrant, energetic setting.

The Tasting Counter: The Most Coveted Seat in the Room

The tasting counter will provide an intimate, interactive experience, inviting guests to engage directly with the chef through a curated tasting menu presented each evening at the live crudo and mozzarella bar. Guests will witness the artistry of burrata preparation, the plating of crudos, and pizzas as they emerge from the oven. Paired with Italian cocktails, inventive mocktails, and a wine program thoughtfully curated to complement each course, the tasting counter promises to be the most sought-after seat in the house—a destination for those who appreciate culinary artistry and connection.
